Why this is the one for kids and cautious eaters

Buffalo is the least intimidating wild game there is. It reads as beef to most people, just a little sweeter and cleaner. Add no heat and no strong seasoning, and you've got a stick that a nine-year-old will finish without asking questions — while still being something other than the standard gas station beef stick.

Stick or flat?

Both are chopped and formed from the same meat. The stick is round and cased, easy to break and eat one-handed. Our smoked buffalo flat is a wider strip with more surface for the smoke. Same flavor, different bite.

Where it comes from

US-raised bison — one of the few proteins genuinely native to this continent, and the product of one of the more successful recovery efforts in American conservation.

Why it's blended

Bison is very lean — leaner than beef at the same weight — and on its own it makes a dry, tough stick. Blending with beef puts back the fat that carries flavor and keeps the texture right. It's a taste-and-texture decision, not a shortcut.
